Oatmeal-Raisin Muffins

  Buttermilk 240 Milliliter (1 Cup)
  Quick oats 240 Milliliter (1 Cup)
  Organic whole wheat flour 240 Milliliter (1 Cup)
  Baking powder 1 Teaspoon (5 Milliliter)
  Baking soda 1⁄2 Teaspoon (3 Milliliter)
  Salt 1⁄2 Teaspoon (3 Milliliter)
  Cinnamon 2 Teaspoon (10 Milliliter)
  Softened butter/Margarine 80 Milliliter (1/3 Cup)
  Firmly packed brown sugar 60 Milliliter (1/4 Cup)
  Honey 15 Milliliter (1 Tablespoon)
  Egg 1
  Raisins/Dried apples, chopped 120 Milliliter (1/2 Cup)

Boil and stir buttermilk and oats for 2 minutes.
Let cool.
Preheat oven to 400°F (205°C).
Mix flour, baking powder, soda, salt and cinnamon in medium bowl.
In large bowl cream together butter, brown sugar, honey and egg.
Mix in cooled oat mixture.
Add raisins.
Add dry ingredients and mix with spoon only until dry ingredients are moistened.
Fill greased muffin tins 2/3 full.
Bake 25-30 minutes.
