Easy Bran Muffins
|Whole bran cereal||1 Cup (16 tbs)|
|Skim milk||1 Cup (16 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Egg||1 , beaten|
|Cooking oil||1⁄4 Cup (4 tbs)|
|Shredded lemon peel||1⁄2 Teaspoon|
|All purpose flour||1 Cup (16 tbs)|
|Whole wheat flour||1⁄2 Cup (8 tbs)|
|Baking powder||2 Teaspoon|
|Nonstick spray coating||2 Tablespoon|
In a medium mixing bowl combine cereal and milk.
Let stand 3 minutes.
Stir in sugar, egg, oil, and lemon peel.
In a large bowl stir together flours, baking powder, and salt.
Add cereal mixture to dry ingredients and stir just till moistened.
Bake immediately or cover and refrigerate up to 4 days.
To bake, spray 12 muffin pan cups with nonstick spray coating.
Fill each cup about two thirds full with batter.
Bake in a 400° oven for 15 to 20 minutes or till a toothpick inserted near the center comes out clean.
