Refrigerator Bran Muffins
|Wheat bran flakes cereal with raisins||15 Ounce (1 Package)|
|All purpose flour||5 Cup (80 tbs)|
|Sugar||3 Cup (48 tbs)|
|Baking soda||2 Tablespoon (1 Tablespoon Plus 2 Teaspoons)|
|Eggs||4 , beaten|
|Shortening||1 Cup (16 tbs), melted|
Combine first 5 ingredients in a large bowl; make a well in center of mixture.
Combine eggs, buttermilk, and shortening; add to dry ingredients, stirring just until moistened.
Cover batter and store in refrigerator up to 6 weeks.
When ready to bake, spoon batter into greased muffin pans, filling two thirds full.
Bake at 350° for 20 minutes.
Remove from pans immediately.
