Honey Bran Muffins
|All purpose flour||1 Cup (16 tbs)|
|Egg/3 egg whites||1|
|Baking soda||1 Teaspoon|
|Honey||1⁄4 Cup (4 tbs)|
|Non fat milk||1⁄4 Cup (4 tbs)|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Ripe bananas||2 Medium, peeled (Dole)|
|100% bran cereal||3⁄4 Cup (12 tbs)|
|Raisins||3⁄4 Cup (12 tbs) (Dole)|
Combine cereal and milk in small bowl; let stand 10 minutes to soften.
Stir in flour, baking soda and salt.
Meanwhile, place bananas in blender.
Process until pureed; use 1 cup for recipe.
Combine 1 cup banana puree, egg, honey and oil in large bowl.
Add cereal mixture to banana mixture, stirring until just moistened.
Fold in raisins.
Spoon batter into 12 greased 2 1/2-inch muffin cups.
Bake in 375°F oven 20 minutes.
Cool in pan on wire rack 3 minutes.
Remove from pan.
