Florida Orange Date Bran Muffins
|Shredded bran cereal||2 Cup (32 tbs)|
|Boiling water||3⁄4 Cup (12 tbs)|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Buttermilk||3⁄4 Cup (12 tbs)|
|Orange juice||1⁄4 Cup (4 tbs)|
|Dark molasses||2 Tablespoon|
|Orange zest||1 Tablespoon, grated|
|All purpose flour||3⁄4 Cup (12 tbs)|
|Whole wheat flour||1⁄2 Cup (8 tbs)|
|Baking soda||1 1⁄2 Teaspoon|
|Chopped dates||1 Cup (16 tbs)|
|Chopped walnuts||3⁄4 Cup (12 tbs)|
Preheat oven to 400°F.
Grease 12 (2 1/2 inch) muffin cups.
Combine bran cereal, water and oil in large bowl, stirring until bran softens.
Whisk buttermilk, orange juice, molasses, honey, orange zest and egg in small bowl until blended.
Combine flours, baking soda and salt in another small bowl.
Add buttermilk mixture to bran mixture, stirring to combine.
Add flour mixture, dates and walnuts to bran mixture, stirring just until flour mixture is moistened.
Spoon evenly into muffin cups.
Bake about 18 minutes or until tops spring back when lightly pressed.
Cool in pan 5 minutes before removing to wire rack.
