Ingredients
  Boiling water 1 Cup (16 tbs)
  Whole bran cereal 2 1⁄2 Cup (40 tbs)
  Eggs 2 , lightly beaten
  Buttermilk 2 Cup (32 tbs)
  Vegetable oil 1⁄2 Cup (8 tbs)
  Finely chopped apple 1⁄2 Cup (8 tbs)
  All purpose flour 2 Cup (32 tbs)
  Sugar 1 Cup (16 tbs)
  Uncooked quick cooking oats 1⁄2 Cup (8 tbs)
  Wheat germ 1⁄2 Cup (8 tbs)
  Baking soda 2 Teaspoon
  Salt 1⁄2 Teaspoon
  Raisins 1 Cup (16 tbs)
  Shredded coconut 1⁄2 Cup (8 tbs)
  Chopped almonds/Walnuts/pecans 1⁄2 Cup (8 tbs)
Directions

Pour water over bran cereal in medium bowl; cool.
Preheat oven to 400°F.
Grease 36 (2 1/2-inch) muffin cups.
Stir eggs, buttermilk, oil and apple into cooled bran mixture.
Combine flour, sugar, oats, wheat germ, baking soda and salt in large bowl.
Stir in bran mixture until blended.
Stir in raisins, coconut and almonds.
Spoon into prepared muffin cups, filling each 2/3 full.
Bake about 22 minutes or until wooden pick inserted in center comes out clean.
Cool in pans 10 minutes.
Remove from pans.
