Banana Orange Muffins
|All purpose flour||2 Cup (32 tbs)|
|Baking powder||1 Tablespoon|
|Undiluted evaporated skimmed milk||1⁄2 Cup (8 tbs) (Use Carnation)|
|Mashed ripe banana||1⁄2 Cup (8 tbs)|
|Honey||1⁄3 Cup (5.33 tbs)|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Grated orange zest||1 Teaspoon|
|Granulated sugar||1 Tablespoon|
In large bowl, combine flour, baking powder and salt; set aside.
In small mixer bowl, slighdy beat egg whites.
Add evaporated skimmed milk, banana, honey, oil and orange zest; beat until blended.
Add liquid ingredients to dry ingredients; stir just until moistened.
Mixture will be lumpy.
Spoon batter into 12 greased or paper-lined 2 1/2-inch muffin cups.
Sprinkle tops with sugar.
Bake in preheated 400°F oven 13 to 15 minutes or until wooden pick inserted in center comes out clean.
Remove from pan; cool on wire rack.
