Blueberry Bran Muffins
|All purpose flour||1 1⁄4 Cup (20 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Baking powder||1 Tablespoon|
|Bran cereal flakes||1 1⁄2 Cup (24 tbs) (Kellogg's Complete)|
|Skim milk||1 Cup (16 tbs)|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Blueberries||1 1⁄2 Cup (24 tbs) (Fresh / Frozen)|
|Non stick cooking spray||1|
Stir together flour, sugar, baking powder and salt.
Measure Kellogg's® Complete® Bran Flakes cereal and milk into large mixing bowl.
Stir to combine.
Let stand about 3 minutes or until cereal is softened.
Add egg and oil, mixing well.
Add flour mixture, stirring only until combined.
Stir in blueberries.
Portion batter evenly into 12 (2 1/2 inch) muffin pan cups coated with nonstick cooking spray.
Bake at 400°F about 20 minutes or until golden brown.
