Fiber Rich Muffins
|Rye bran crisp bread||3 Ounce (1 Inner Pack, Kavli)|
|Skim milk||1 Cup (16 tbs)|
|Unsweetened applesauce||1⁄2 Cup (8 tbs)|
|Egg||1 , lightly beaten|
|Firmly packed brown sugar||2 Tablespoon|
|Vegetable oil||2 Tablespoon|
|Ground cinnamon||1⁄2 Teaspoon|
|Ground cloves||1⁄4 Teaspoon|
|Ground nutmeg||1⁄4 Teaspoon|
|All purpose flour||1 1⁄4 Cup (20 tbs)|
|Baking powder||1 Tablespoon|
Preheat oven to 400°F.
Break crispbread into chunks; process in food processor or blender until finely crushed.
Place in mixing bowl.
Heat milk to almost boiling.
Pour over bread crumbs.
Stir to mix.
Let stand 5 minutes.
Stir applesauce and egg into crumb mixture.
Break up large lumps, if present.
Add sugar, oil, molasses, spices and salt.
Combine flour and baking powder.
Add to crumb mixture, stirring just until flour is moistened.
Fill 12 greased 2 1/2-inch muffin cups half full.
Bake 20 to 25 minutes or until browned.
Remove from pans and cool slighdy on wire rack before serving.
