Streusel Bran Muffins
|All purpose flour||3 Tablespoon|
|Firmly packed brown sugar||2 Tablespoon|
|Margarine||1 Tablespoon (Cold)|
|All purpose flour||1 1⁄4 Cup (20 tbs)|
|Baking powder||1 Tablespoon|
|Ground cinnamon||1⁄2 Teaspoon|
|Ground nutmeg||1⁄4 Teaspoon|
|Bran cereal flakes||1 1⁄2 Cup (24 tbs) (Kellogg's Complete)|
|Skim milk||3⁄4 Cup (12 tbs)|
|Firmly packed brown sugar||1⁄2 Cup (8 tbs)|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Seedless raisins||1⁄2 Cup (8 tbs)|
|Vegetable cooking spray||1|
In small bowl, combine 3 tablespoons flour and 2 tablespoons sugar.
Using pastry blender, cut in margarine until mixture resembles coarse crumbs.
Set aside for topping.
Stir together 1 1/4 cups flour, baking powder, salt and spices.
In large mixing bowl, combine Kellogg's® Complete® Bran Flakes cereal and milk.
Let stand about 3 minutes or until cereal softens.
Add 1/2 cup sugar, egg whites, oil, vanilla and raisins.
Add flour mixture, stirring only until combined.
Pour batter evenly into twelve 2 1/2 inch muffin pan cups coated with cooking spray.
Sprinkle with topping.
Bake at 400°F about 20 minutes or until lightly browned.
