Bran And Dates Muffins
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Brown sugar||1 1⁄4 Cup (20 tbs)|
|All purpose flour||1 Cup (16 tbs)|
|Wheat bran||1 Cup (16 tbs)|
|Buttermilk/1 tablespoon. vinegar added to sweet milk||1 Cup (16 tbs)|
|Chopped dates||1 Cup (16 tbs)|
Cream butter, sugar and eggs together.
Combine dry ingredients in separate bowl.
Add a little buttermilk to egg mixture, then stir in some of the dry ingredients - alternating with the milk.
Fold gently just until blended.
Fold in dates.
Bake at 350° for 15 to 20 minutes, (don't overcook).
