Pumpkin Sugar Cube Muffins
|Milk||1⁄2 Cup (8 tbs)|
|Pumpkin||1⁄2 Cup (8 tbs) (Cooked Or Canned)|
|Cooking oil||1⁄4 Cup (4 tbs)|
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Baking powder||2 Teaspoon|
|Chopped nuts||1⁄2 Cup (8 tbs)|
|Orange rind||2 Teaspoon|
|Orange juice||1⁄2 Cup (8 tbs)|
Beat egg, stir in milk.
Add pumpkin and oil - mix well.
Sift dry ingredients together, stir in nuts and orange rind.
Fold into first mixture.
Stir just until well mixed.
Fill greased muffin tins 3/4 full.
Dip sugar cubes in orange juice and press one into each muffin.
Bake at 375° for 20 to 35 minutes.
