Breakfast Recipe: Apple Crumb Muffins

It's officially Fall and that means it's acceptable to have apple EVERYTHING! Kick your first weekend of Fall off right right my super easy but very delicious Apple Crumb Muffins!

Ingredients

For muffins:
All purpose flour 1 Cup (16 tbs)
Whole wheat flour 1 Cup (16 tbs)
Baking powder 1 Tablespoon
Ground cinnamon 1 1/2 Teaspoon
Granulated sugar 3/4 Cup (12 tbs)
Salt 1/2 Teaspoon
Eggs 2 Large
Full fat greek yogurt 1 Cup (16 tbs) (((plain)))
Melted butter 1/4 Cup (4 tbs)
Vanilla extract 1 Teaspoon
Chopped peeled apples 1 1/2 Cup (24 tbs)
For crumb topping:
Brown sugar 2 Tablespoon
All purpose flour 1 1/2 Tablespoon
Ground cinnamon 1/4 Teaspoon
Cold butter 1 Tablespoon , cut into cubes

Directions

GETTING READY:

Preheat oven to 400°F.

Grease the muffin tin and set aside.

       

MAKING:                        

In a large bowl, combine all purpose flour, whole wheat flour, sugar, cinnamon, salt and mix well.

In another bowl, combine eggs, yogurt, butter, vanilla and mix well.

Combine egg mixture with flour mixture and mix well.

Fold in apple chunks.

Fill muffin tin cups and set aside.

In a small bowl, combine sugar, flour, cinnamon, butter and mix for a crumb like mixture.

Sprinkle over muffin tins as shown in the video.

Pop into oven and bake for 17-20 minutes.

 

SERVING:                       

Allow to cool completely, serve and enjoy!
