Bacon Bran Muffins
|Whole bran cereal||1 Cup (16 tbs)|
|Milk||3⁄4 Cup (12 tbs)|
|Bacon slices||5 , diced and fried (Reserve 0.25 Cup Drippings)|
|Sifted all purpose flour||1 Cup (16 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Baking powder||2 1⁄2 Teaspoon|
|Egg||1 , well beaten|
Mix bran and milk; let stand until milk is absorbed, about 10 minutes.
Blend flour, sugar, baking powder, and salt in a bowl.
Mix in the bacon pieces.
Stir reserved bacon drippings into bran mixture.
Mix in egg until blended.
Turn the bran mixture over dry ingredients; stir quickly and lightly only enough to moisten ingredients.
Spoon batter equally into greased 2 1/2 inch muffin-pan wells.
Bake at 400°F about-20 minutes
