Wheat Germ Muffins
|All purpose flour||1 Cup (16 tbs)|
|Baking powder||4 Teaspoon|
|Baking soda||1⁄4 Teaspoon|
|Wheat germ||1 Cup (16 tbs), toasted|
|Soft butter||2 Tablespoon|
|Lightly packed brown sugar||1⁄4 Cup (4 tbs)|
|Orange peel||1 Teaspoon, grated|
|Orange juice||1⁄4 Cup (4 tbs)|
|Plain yogurt||3⁄4 Cup (12 tbs)|
Sift flour, baking powder, baking soda, and salt; mix in wheat germ.
Cream butter with brown sugar.
Add egg and beat well.
Beat in orange peel and orange juice.
Add dry ingredients alternately with yogurt to creamed mixture, mixing lightly after each addition.
Fill greased medium muffin-pan wells about 3/4 full.
Bake at 425°F about 15 minutes.
