Corn Meal Muffins Or Corn Sticks

Ingredients
  Sifted flour 1 Cup (16 tbs)
  Corn meal 3⁄4 Cup (12 tbs)
  Baking powder 2 Teaspoon (Calumet)
  Salt 3⁄4 Teaspoon
  Sugar 2 Tablespoon
  Egg 1 , beaten
  Milk 3⁄4 Cup (12 tbs)
  Shortening 1⁄4 Cup (4 tbs), melted
Directions

Sift flour, corn meal, baking powder, salt, and sugar together.
Add egg, milk, and shortening.
Stir until blended. (Do not overmix.) Tor muffins, spoon batter into greased muffin pans, filling 2/3 full.
Bake in hot oven (425°F.) 25 minutes, or until lightly browned.
For corn sticks, heat greased corn stick pans; pour in batter.
Bake in hot oven (450°F.) 20 minutes, or until golden brown.
