Chocolate Mousse Muffins
|Semi-sweet chocolate||5 Ounce|
|Unsweetened chocolate||2 Ounce|
|Butter||1⁄2 Cup (8 tbs)|
|Sour cream||3⁄4 Cup (12 tbs)|
|Brown sugar||2⁄3 Cup (10.67 tbs)|
|Light corn syrup||1⁄4 Cup (4 tbs)|
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Baking soda||1 Teaspoon|
|Semi sweet chocolate chips||2⁄3 Cup (10.67 tbs)|
Melt first three ingredients (chocolates and butter) in a double boiler.
Whisk sour cream, sugar, syrup, egg and vanilla in a small bowl.
Put remaining ingredients in large bowl with two-thirds cup chocolate chips and stir thoroughly.
Add melted chocolate to mixture in small bowl.
Pour into well in the large bowl of dry ingredients and blend for 10 seconds.
Batter will be lumpy.
Spoon into greased muffin pans until three-fourths full.
Bake until tester comes out clean.
Bake at 400 degrees 20 minutes
