Crab And Avocado Mousse

  Unflavored gelatin 1 Tablespoon
  Water 1⁄4 Cup (4 tbs)
  Avocados 1 1⁄2 , peeled and pitted
  Lemon juice 5 Tablespoon
  Celery 3 Tablespoon, minced
  Chives 1 Tablespoon, minced
  Red hot pepper sauce 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  White pepper 1 Pinch
  Green bell pepper 1⁄4 Cup (4 tbs), minced
  Red bell pepper 1 Tablespoon, minced
  White crab meat 6 Ounce
  Heavy cream 1⁄2 Pint, whipped

Soften gelatin in water, dissolve it over hot water.
Blend avocados in a food processor, add lemon juice, celery, chives, hot sauce, salt, bell peppers, crab meat (drained).
Then add whipped cream, taste for seasoning.
Pour the mixture into a lightly oiled ring mold, and chill for several hours or overnight.
Run a knife around the mold, dip in hot water, unmold and decorate with lemon slices, or mint and tomato slices, or green leaves.
You can serve with Roast, or as an appetizer with crackers.
