Smoked Trout Mousse
|Smoked trout||1 Pound|
|Prepared horseradish||2 Teaspoon|
|Lemon juice||2 Tablespoon|
|Ground black pepper||To Taste|
|Olive oil||3 Tablespoon|
|Heavy cream||1⁄2 Cup (8 tbs)|
Place trout in the bowl of a food processor fitted with steel blade.
Add shallots and oil, process 30 seconds, or until well blended.
Gradually add cream, processing until mixture is of a thick, spreading consistency.
Add horseradish, lemon juice and pepper, mix well.
Transfer mixture to a serving dish garnish with dill.
Refrigerate, covered, until ready to serve.
Serve with slices of toasted bread and/or assorted crackers.
