Salmon Mousse

Ingredients
  Salmon 16 Ounce
  Unflavored gelatin 2 Tablespoon
  Mayonnaise/Salad dressing 1 Cup (16 tbs)
  Lemon juice 2 Tablespoon
  Prepared horseradish 2 Teaspoon
  Paprika 1⁄2 Teaspoon
  Diced celery 1⁄2 Cup (8 tbs)
  Chopped pimiento stuffed green olives 1⁄4 Cup (4 tbs)
  Finely chopped onion 1 Tablespoon
  Whipping cream 1⁄2 Cup (8 tbs)
Directions

Drain salmon, reserving liquid.
Remove skin and large bones; flake salmon.
Add cold water to reserved liquid to equal 1% cups.
In saucepan soften gelatin in salmon liquid.
Stir over low heat till gelatin is dissolved; cool slightly.
Blend together mayonnaise and next 3 ingredients; gradually stir in cooled gelatin mixture.
Chill till partially set.
Fold in salmon, celery, olives, and onion.
Whip cream just till soft peaks begin to form; fold into salad.
Turn into a 51/2-cup fish mold.
Chill till firm.
Trim with lettuce, if desired.
