Red Raspberry Yogurt Mousse

Ingredients
Red Raspberry Yogurt - 2 cups
Egg whites - 2, stiffly beaten
Whipped cream - 1/2 cup
Rum - 2 tablespoon
Coconut - 1 cup toasted
Orange rind - 2 tablespoon, grated
Directions

MAKING
1. In a bowl, add stiffly beaten egg whites, whip cream and fold together.
2. Add rum, raspberry yogurt.
3. Add coconut, orange rind

FINALISING
4. Into parfait glasses, spoon the mixture and chill for 3 hours until well set.

SERVING
5. Serve chilled.
