|Unflavored gelatin||1 Tablespoon (1 Envelope)|
|Cold water||1⁄4 Cup (4 tbs)|
|Fruit juice||1⁄2 Cup (8 tbs)|
|Sherbet||2 Cup (32 tbs)|
|Whipping cream||1⁄2 Cup (8 tbs), whipped|
In blender, sprinkle gelatin over cold water; let stand for a few minutes to soften.
In small saucepan, heat fruit juice to boiling.
Pour into blender and whirl until gelatin is dissolved.
Drop in spoonfuls of sherbet, blending after each addition.
Using lowest speed, fold whipped cream into blender mixture.
Pour into parfait glasses and chill until set, about 30 minutes.
