Coffee Ricotta Mousse

|Ricotta cheese||1 Pound|
|Confectioners' sugar||1⁄2 Cup (8 tbs)|
|Instant coffee granules||2 Tablespoon|
|Pure vanilla extract||1⁄2 Teaspoon|
|Brandy||1 Tablespoon (Optional)|
In the bowl of a food processor or using an electric mixer, whip all of the ingredients together until smooth and evenly colored.
Serve immediately in individual dessert cups, or make a day or two ahead and keep covered and refrigerated.
