Arctic Mousse

Ingredients
  Frozen fruit puree 1⁄2 Pint, thawed (Raspberry Or Blackcurrant)
  Egg yolks 4
  Gelatin 1⁄2 Ounce, powdered
  Water 3 Tablespoon
  Double cream 3⁄4 Pint
  Egg whites 2
Directions

MAKING
1. In a large basin, add the puree, sugar and yolks and place the basin over a pan of hot water
2. Whisk them together until the ingredients blend in and the mixture turns thick, remove it from the heat
3. In a smaller basin add water and sprinkle some gelatin on it
4. Put this basin in a pan comtaining hot water and stir till the gelatin dissolves
5. Add this to the fruit mixture and allow it to cool until just beginning to set
6. Ina bowl, whisk cream until as thick as the fruit mixture and add it to the fruit mixture too
7. Cut the actic roll into thin slices and line an 8" loose based cake tin with it
8. Whisk egg whites until stiff and add them to the mousse and trasnfer it all into the cake tin; freeze until totally firm

SERVING
9. Unmould the souffle, slice it and serve
