Kid's Mousse Chocolate Mousse
|Plain chocolate||100 Gram|
|Castor sugar||50 Gram|
|Coffee essence||2 Teaspoon|
Break the chocolate up into a mixing bowl and add the sugar.
Put a little water into a medium sized saucepan and bring to the boil.
Place the mixing bowl on to the saucepan and turn the heat down to very low.
Holding an egg in one hand, tap the middle of the shell on to the edge of another mixing bowl.
Carefully let the egg white fall into the bowl while keeping the yolk in the shell.
Tip the yolk from one half shell to the other.
Repeat with the other eggs.
When the chocolate has melted add the egg yolks, coffee and cream and whisk together.
Using a clean whisk, whisk the egg whites until they are very stiff and frothy.
Remove the bowl of chocolate mixture from the saucepan of hot water and put on a board.
Using a metal tablespoon lift the beaten egg white into the chocolate mixture.
Very carefully fold the egg white into the chocolate.
Do not stir, simply lift the chocolate and fold it into the egg whites.
Quickly and lightly divide the mixture between 4 glass dishes and put into the refrigerator to set.
This will take about 1 hour.
