Quick And Easy Apricot Mousse
|Dried apricots||10 Ounce (1 1/2 Cups / 300 Grams)|
|Fresh orange juice||1⁄2 Pint (300 Milliliter / 1 1/4 Cup)|
|Low fat fromage frais||7 Ounce (200 Grams / 7/8 Cups)|
|Mint sprigs||3 (For Decoration)|
1. Place the apricots in a saucepan with the orange juice and heat gently until boiling. Cover and simmer gently for 3 minutes.
2. Cool slightly. Place in a food processor or blender and process until smooth. Stir in the fromage frais.
3. Whisk the egg whites until stiff enough to hold soft peaks, then fold into the apricot mixture.
4. Spoon into four stemmed glasses or one large serving dish. Chill before serving.
