Chocolate Mousse with Whipped Cream
|Eggs||4 , separated|
|Caster sugar||4 Ounce (125 Gram)|
|Plain chocolate||4 Ounce, broken into small pieces (125 Gram)|
|Double cream||1 Pint (1/2 Pint / 600 Milliliter Extra For Decoration)|
|Chocolate curls||1 Cup (16 tbs) (For Decoration)|
Put the egg yolks and sugar in a bowl and whisk with an electric beater until the mixture is thick and fluffy Melt the chocolate with the water in a heatproof bowl over a pan of hot water.
Remove from the heat and cool slightly.
Whisk this into the egg mixture.
Whip the cream until it will stand in soft peaks, then carefully fold it into the chocolate mixture.
Whisk the egg whites until they form stiff peaks.
Carefully fold 1 tablespoon into the mousse, then fold in the remainder.
Pour the mousse mixture into 8 individual dishes and chill.
Serve decorated with whipped cream and chocolate curls.
