Watermelon Seafood Mousse
|Cold water||1⁄4 Cup (4 tbs)|
|Finely chopped celery||3⁄4 Cup (12 tbs)|
|Cooked flaked seafood||1 1⁄2 Cup (24 tbs) (Fish, Prawns, Etc.)|
|Cubed watermelon||1 Cup (16 tbs)|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Lemon juice||2 Tablespoon|
|Freshly ground pepper||To Taste|
|Whipped cream||1⁄2 Cup (8 tbs)|
Soak gelatine in cold water, then place over hot water to dissolve.
Mix dissolved gelatine, chopped celery, prepared seafood and watermelon together.
Moisten with mayonnaise and then season with lemon juice, salt and pepper.
Fold in whipped cream.
Pour into small individual moulds or a 4-cup mould and refrigerate until set.
Unmould onto a bed of watercress or lettuce.
Use pieces of watermelon, or slices of lime or lemon and chopped parsley as garnish.
