Savory Avocado Mousse
|Plain gelatin||1 1⁄2 Tablespoon|
|Cold water||1⁄2 Cup (8 tbs)|
|Boiling water||1⁄2 Cup (8 tbs)|
|Mashed avocados||2 1⁄2 Cup (40 tbs) (Use 4-5 Medium Sized)|
|Chopped parsley||3 Tablespoon|
|Lemon juice||1 Tablespoon|
|Onion juice||1⁄2 Teaspoon|
|Worcestershire sauce||1 Teaspoon|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Whipped heavy cream||1⁄2 Cup (8 tbs)|
Sprinkle gelatin on cold water, dissolve in boiling water.
Mash the avocados with a silver fork and blend in the parsley, lemon and onion juices, Worcestershire sauce, and salt to taste.
Fold the mayonnaise and gelatin into the whipped cream and combine with the avocado mixture.
Pour into a quart mold rinsed in cold water and chill until firm.
Unmold on a chilled platter and garnish with stemmed sprigs of watercress and tomato quarters.
