Pumpkin Mousse

Ingredients
  Gelatin 3 Teaspoon
  Cold water 4 Tablespoon
  Boiling water 4 Tablespoon
  Light cream 4 Fluid Ounce (1/2 Cup / 125 Milliliter)
  Caster sugar 2 Ounce (1/4 Cup / 60 Gram)
  Ground nutmeg 1⁄2 Teaspoon
  Vanilla essence 2 Teaspoon
  Ground ginger 1 Teaspoon
  Freshly squeezed lemon juice 2 Tablespoon
  Pumpkin 1 Cup (16 tbs), cooked and pureed
  Egg whites 4
  Caster sugar 1 Teaspoon
Directions

1. Sprinkle gelatin over cold water and soften for 5 minutes. Add boiling water and mix well. Stir in cream, sugar, nutmeg, vanilla and ginger. Add lemon juice and pumpkin puree, mix until well combined. Refrigerate mixture for 10-15 minutes.
2. Beat egg whites with extra sugar until soft peaks form. Whisk pumpkin mixture for 10 seconds and fold in egg whites. Spoon into serving glasses, refrigerate before serving.
