Avocado Mousse

Ingredients
  Avocados 2
  Double cream 45 Milliliter (3 Tablespoon)
  Cognac 1 Teaspoon
  Lemon juice 1 Tablespoon (Juice Extracted From 1 Lemon)
  Salt To Taste
  Pepper To Taste
Directions

1. Halve the avocados and remove the stones. With a spoon, carefully scoop out the flesh, reserving the skins.
2. In a liquidizer, place the avocado flesh, cream, lemon juice and cognac. Season. Blend until smooth.
3. Fill the avocado skins with the mousse. Refrigerate and serve very cold.
