Tuna Mousse

Ingredients
  Powdered gelatin 1⁄4 Ounce (7 Gram)
  Water 4 Fluid Ounce (120 Milliliter)
  Mayonnaise 6 Fluid Ounce (175 Milliliter)
  Lemon juice 1 Tablespoon
  Paprika 1⁄4 Teaspoon
  Cayenne pepper 1 Pinch
  Salt 1⁄2 Teaspoon
  Canned tuna fish 7 Ounce, drained, flaked (198 Gram, 1 Can)
  Celery sticks 2 , finely chopped
  Minced green pepper 2 Tablespoon
  Double cream 1⁄4 Pint (150 Milliliter)
  Lettuce leaves 1
  Watercress 1
Directions

Dissolve the gelatine in the water, then stir in the mayonnaise, lemon juice, paprika, cayenne and salt.
When well mixed, fold in the tuna, celery and green pepper.
Whip the cream until stiff and fold in.
Pour into a 1 litre (2 pint) decorative mould and chill until set.
Turn out onto a serving plate and garnish with lettuce leaves and watercress.
