Apricot Mousse

Ingredients
  Heavy cream 1 Cup (16 tbs)
  Lemon 1⁄2 , juiced
  Sweetened apricots/Stewed dried apricots 1 Cup (16 tbs) (fresh)
  Fresh apricot halves 1⁄2 Cup (8 tbs)
  Loganberries 1⁄2 Cup (8 tbs)
Directions

Whip cream until just stiff.
Mix lemon juice and apricots.
Fold into cream.
Turn into trays and freeze with setting at coldest point, or turn into mold and freeze.
Unmold, and garnish with apricot halves and loganberries.
