Prawn Cheese And Cucumber Mousse

Ingredients
  Cucumber 1⁄2 , peeled and diced
  Salt To Taste
  Wine vinegar 45 Milliliter (3 Tablespoon)
  Cream cheese 12 Ounce (350 Grams)
  Double cream 4 Fluid Ounce (125 Milliliter)
  Mayonnaise 6 Fluid Ounce (175 Milliliter)
  Paprika 1⁄2 Teaspoon
  Pepper To Taste
  Chopped chives 30 Milliliter (2 Tablespoon)
  Gelatin 1⁄2 Ounce (15 Grams)
  Hot water 2 Fluid Ounce (50 Milliliter)
  Shelled prawns 8 Ounce (225 Grams)
Directions

Put the cucumber in a colander and sprinkle with salt and vinegar.
Leave for 1 hour.
Press to remove any liquid and set aside.
Beat the cheese until soft and creamy.
Fold in the cream and mayonnaise.
Add the paprika, pepper to taste and chives.
Dissolve the gelatine in the water and mix into the cheese mixture.
Fold in the prawns and cucumber.
Pour into a lightly oiled 900 ml./ 1 1/2 pint mould.
Chill for 1 hour or until set.
