Orange Lemon Mousse
|Oranges||4 Large, hollowed out|
|Unflavored gelatin||1 Tablespoon|
|Orange juice||1⁄3 Cup (5.33 tbs)|
|Lemon juice||1⁄3 Cup (5.33 tbs)|
|Grated lemon rind||1 Tablespoon|
|Eggs||4 , separated|
1. Cut 1/2-inch slice from top of each orange; using teaspoon, scoop out orange pulp. Set orange shells aside. Press pulp through strainer to yield 1/3 cup juice.
2. In small saucepan, combine gelatin, sugar, orange juice, lemon juice and lemon rind. Place over very low heat just until gelatin is dissolved.
3. Using electric mixer at high speed, beat egg yolks in large bowl until thick and lemon colored. Slowly beat in orange-lemon mixture. Pour into large bowl. Chill until semi-set, 30 to 45 minutes; beat until fluffy.
4. In another large bowl, beat egg whites until stiff. Using rubber spatula, fold into orange-lemon mixture. Spoon into orange shells; chill until completely set, about 1 hour.
