1. Sprinkle gelatin over 1/4 cup skim milk in small bowl; let stand for 5 minutes to soften. Add boiling water; stir until gelatin is completely dissolved. Stir in lime sherbet; cool slightly.
2. Using electric mixer at high speed, beat evaporated milk in medium bowl until it is consistency of whipped cream. Using rubber spatula, fold into lime sherbet mixture.
3. Divide mixture among 4 individual souffle dishes or 10-ounce custard cups; chill until completely set, about 1 hour.
