Basic Mousse With Variations
|Unflavored gelatin||1 Tablespoon (1 Envelope)|
|Cold water||1⁄2 Cup (8 tbs)|
|Instant nonfat dry milk||1 Cup (16 tbs)|
|Honey/Sugar||1⁄4 Cup (4 tbs)|
|Vanilla extract||1 Teaspoon|
|Mint sprigs||2 (For Garnishing)|
|Strawberries||2 (For Garnishing)|
1. Sprinkle gelatin over cold water in a saucepan; let stand 5 minutes. Set over low heat, stirring constantly until gelatin is dissolved (about 3 minutes).
2. Pour gelatin mixture into food processor or blender container; add remaining ingredients except ice cubes. Process 10 seconds. Add ice cubes one at a time until mixture has consistency of heavy whipped cream.
3. Pour mixture into a serving bowl or individual stemmed glasses. Refrigerate until set (about 1/2 hour). Garnish with mint or strawberries.
