Yukon Moose Or Caribou Stew

Ingredients
  Moose/Caribou / stewing beef, cubed 2 Pound
  Lemon juice 3 Tablespoon
  Salt 1 Teaspoon
  Chili powder 1 Teaspoon
  All purpose flour 1 1⁄2 Cup (24 tbs)
  Shortening 2 Tablespoon
  Hot water 1 Cup (16 tbs)
  Parsley 1⁄2 Cup (8 tbs), chopped
Directions

Sprinkle meat with lemon juice.
Season with salt and chili powder.
Dredge with flour.
Heat shortening and brown meat in it on all sides.
Add hot water to cover.
Simmer, covered, over low heat for about 2 hours, or until meat is tender.
Remove cover 15 minutes before serving and cook down gravy to desired consistency.
Add parsley.
Serve with boiled potatoes, noodles, or rice.
Makes 4 to 6 servings.
