Soft Molasses Cookies

Ingredients
  Baking soda 2 Teaspoon
  Hot water 2 Tablespoon
  Shortening 1⁄2 Cup (8 tbs)
  Granulated sugar 1⁄2 Cup (8 tbs)
  Molasses 1⁄2 Cup (8 tbs)
  Egg 1
  Sifted all purpose flour 2 1⁄4 Cup (36 tbs)
  Ginger 1 Teaspoon
  Cinnamon 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Cold coffee/Water 6 Tablespoon
  Seedless raisins 1⁄2 Cup (8 tbs)
Directions

Dissolve soda in hot water.
Stir well; then set mixture aside to cool.
Meanwhile, work the shortening with a spoon until light and fluffy; gradually add sugar and molasses, continuing to work with a spoon.
Then stir in unbeaten egg; beat mixture well.
Sift flour, ginger, cinnamon, and salt, and add alternately with coffee to shortening mixture.
Stir in soda.
Add all but a few of the raisins.
Drop by rounded table-spoonfuls, 2" apart, on greased cookie sheet.
Use remaining raisins to sprinkle over tops of the unbaked cookies.
Bake in moderately hot oven of 400°F for 12 min., or until cookies are brown.
