Filled Molasses Cookies

Ingredients
  Packed brown sugar 1⁄2 Cup (8 tbs)
  Shortening 1⁄2 Cup (8 tbs)
  Egg 1
  Molasses 1⁄2 Cup (8 tbs)
  Buttermilk 1⁄4 Cup (4 tbs)
  All purpose flour/Unbleached flour 3 Cup (48 tbs)
  Baking soda 1 Teaspoon
  Baking powder 1 Teaspoon
  Ground cinnamon 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Ground cloves 1⁄4 Teaspoon
  Ground nutmeg 1⁄4 Teaspoon
  Orange marmalade 1 3⁄4 Cup (28 tbs)
  Chopped dates/Candied fruits / raisins 2 Tablespoon
Directions

Heat oven to 375°.
Mix brown sugar, shortening, egg, molasses and buttermilk.
Stir in flour, baking soda, baking powder, cinnamon, salt, cloves and nutmeg.
Divide dough into 3 equal parts.
Roll each part 1/16 inch thick on floured surface.
Cut into 2-inch rounds.
Spoon 1/2 teaspoon marmalade onto half of the rounds; cover with remaining rounds.
Top each cookie with piece of date.
Place on ungreased cookie sheet.
Bake 8 to 9 minutes or until no indentation remains when touched.
