Soft Molasses Cookies Goose Fat

Ingredients
  All purpose flour 3 Cup (48 tbs)
  Ginger 4 Teaspoon
  Cinnamon 2 Teaspoon
  Salt 1 Teaspoon
  Goose grease 1⁄2 Cup (8 tbs) (rendered)
  Molasses 1 Cup (16 tbs)
  Soda 1 Teaspoon
  Hot water 1 Tablespoon
Directions

Sift flour, measure and resift 3 times with spices and salt.
Combine goose grease with molasses and beat well.
Add soda to the hot water and combine with molasses mixture.
Add the sifted dry ingredients and stir until dry ingredients are thoroughly blended.
Chill.
Divide into 2 portions and roll to about 3/8-inch thickness.
Cut with a 3-inch cutter.
Bake on an ungreased cookie sheet in a moderate oven (350° F.) for 8 to 10 minutes or until done.
Cool on cake racks.
Makes 2 1/2 dozen.
