Filled Molasses Cookies
|Shortening||1⁄2 Cup (8 tbs)|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Molasses||1⁄4 Cup (4 tbs)|
|Soured milk/Buttermilk||1⁄4 Cup (4 tbs)|
|Gold medal flour||3 Cup (48 tbs)|
|Baking powder||1 Teaspoon|
|Orange marmalade/Cut-up dates / candied fruit / raisins||3⁄4 Cup (12 tbs)|
Heat oven to 375° (quick mod.)- Mix shortening, sugar, and egg thoroughly.
Stir in molasses and milk.
Measure flour by dipping method or by sifting.
Blend dry ingredients; stir in.
If dough is too soft to roll, chill.
Roll dough, 1/3 at a time, as thin as possible (1/16" thick) on floured board.
Cut in 2" rounds.
Place 1/2 tsp.marmalade on half the rounds; cover with remaining rounds.
Top each cooky with a piece of cut-up date or candied fruit or a raisin.
Place on lightly greased baking sheet.
Bake 10 to 12 min.
