Soft Molasses Cookies
|All purpose flour||2 1⁄2 Cup (40 tbs)|
|Ground ginger||1 Teaspoon|
|Ground cinnamon||1 Teaspoon|
|Butter||1⁄2 Cup (8 tbs), softened|
|Sugar||1⁄2 Cup (8 tbs)|
|Molasses||1⁄2 Cup (8 tbs)|
|Cold water||1⁄4 Cup (4 tbs)|
|Seedless raisins||1 Cup (16 tbs)|
Combine flour, soda, ginger, cinnamon and salt.
Beat butter, sugar, molasses and egg together in a bowl until light and fluffy.
Add dry ingredients alternately with cold water; beat until well blended.
Stir in raisins.
Drop by teaspoonsful about 2 inches apart onto lightly greased cookie sheets.
Bake at 375° for 10 to 12 minutes.
Remove cookies from cookie sheets; transfer to wire racks; cool.
