Apple Molasses Muffins
|All purpose flour||2 Cup (32 tbs)|
|Packed brown sugar||1⁄4 Cup (4 tbs)|
|Baking soda||1 Teaspoon|
|Ground cinnamon||1 Teaspoon|
|Ground allspice||1⁄2 Teaspoon|
|Molasses||1⁄3 Cup (5.33 tbs)|
|Milk||1⁄4 Cup (4 tbs)|
|Butter||4 Tablespoon, melted|
|Red cooking apples||2 Medium, peeled and diced|
|Walnuts||1⁄3 Cup (5.33 tbs), chopped|
1. Preheat oven to 400°F. Grease twelve 2 1/2 by 1 1/4 muffin-pan cups.
2. In large bowl, mix first 5 ingredients. In small bowl, beat molasses, milk, butter or margarine, and egg until blended; stir into flour mixture just until flour is moistened (batter will be lumpy). Fold in apples and walnuts.
3. Spoon batter into cups to come almost to the top of each cup. Bake 25 minutes or until toothpick inserted in center of muffin comes out clean. Immediately remove from pans; serve warm. Or cool on wire rack; reheat if desired.
