Molasses Coconut Chews

Ingredients
  Sifted cake flour 2 Cup (32 tbs)
  Molasses 1 Cup (16 tbs)
  Soda 1⁄4 Teaspoon
  Margarine 1⁄3 Cup (5.33 tbs), melted
  Salt 1⁄2 Teaspoon
  Egg whites 1⁄2 Cup (8 tbs) (Unbeaten)
  Sugar 1 Cup (16 tbs)
  Shredded coconut 1 1⁄2 Cup (24 tbs) (Lightly Packed)
  Vanilla 1⁄4 Teaspoon
Directions

Preheat oven to 350°F.
Sift together flour, soda and salt.
Combine sugar, vanilla, molasses and margarine.
Quickly beat in egg whites.
Add sifted dry ingredients all at once.
Add coconut and stir to mix. (Do not overmix.)
Line two 8x8x2 inch square pans with waxed paper; grease well with margarine.
Pour batter into pans.
Bake in oven 35 minutes.
Immediately turn out on wire rack to cool.
Remove paper.
Cool about 5 minutes; turn right side up.
When cold, cut each cake into 12 squares.
