Mocha Froth

Ingredients
  Unflavored gelatin envelope 1
  Cocoa 1 Tablespoon
  Salt 1⁄8 Teaspoon
  Sugar 1⁄2 Cup (8 tbs)
  Vanilla 1 Teaspoon
  Instant coffee 1 Tablespoon
  Egg whites 2
Directions

Soften gelatin in 2 tablespoons cold water; set aside.
Combine sugar, coffee, cocoa and salt.
Add 1 1/2 cups boiling water; add gelatin mixture.
Stir to dissolve.
Add vanilla.
Refrigerate until slightly thick- ened; add egg whites.
Beat cocoa mixture at high speed with electric mixer until thickened.
Refrigerate.
Serve with slightly sweetened whipped cream, if desired.
