Chocolate Mocha Pudding
|Granulated sugar||1⁄2 Cup (8 tbs)|
|Unsweetened cocoa powder||3 Tablespoon, sifted|
|Instant coffee granules||1⁄4 Teaspoon|
|Milk||2 Cup (32 tbs)|
In 8-cup (2 L) bowl, combine sugar, cocoa, cornstarch, cinnamon and coffee granules; blend until smooth.
Gradually stir in milk.
Microwave at High for 5 to 6 minutes or until pudding starts to come to boil and has thickened slightly, whisking every 2 minutes.
Stir in butter and vanilla.
Place waxed paper or plastic wrap directly on pudding surface.
Refrigerate until serving time, at least 2 hours.
Remove wrap and whisk gently; spoon into individual dessert dishes.
