Low Calorie Mocha Molds
|Instant coffee powder||1 Tablespoon|
|Eggs||2 , separated|
|Unflavored gelatin||1 Ounce (1 Envelope)|
|Non caloric liquid sweetener||2 Teaspoon|
|Vanilla extract||1 Teaspoon|
|Whipped topping||4 Tablespoon|
In top part of double boiler mix cocoa, cornstarch, coffee, and salt.
Add 1 3/4 cups water, mix well; bring to boil over direct heat.
Cook, stirring, for 5 minutes.
Remove from heat; cool.
Beat egg yolks.
Stir a little mixture very gradually into egg yolks.
Put back in double boiler and put over boiling water.
Cook for 2 or 3 minutes.
Sprinkle gelatin on 1/4 cup cold water; let stand for 5 minutes until softened.
Stir into hot mixture.
Add sweetener and vanilla.
Chill until thickened.
Beat egg whites stiff.
Fold into chilled mixture.
Pour into 4 molds and chill until firm.
Serve with Whipped Topping.
