Ribbon Mocha Parfaits
|Low calorie chocolate pudding mix||4 Ounce (1 Envelope, 4 Serving Size)|
|Instant coffee crystals||2 Teaspoon|
|Skim milk||1 3⁄4 Cup (28 tbs)|
|Egg whites||2 , stiff beaten|
|Low calorie dessert topping mix||1 1⁄4 Ounce (1 Envelope)|
Combine pudding mix and coffee crystals; slowly stir in skim milk, Cook and stir till thickened and bubbly, Remove from heat.
Cover surface of pudding with waxed paper and cool to room temperature.
Fold in egg whites, Prepare topping mix according to package directions.
Fold 1/2 cup of the topping into pudding.
Alternately spoon pudding and remaining topping into 6 parfait glasses.
If desired, top with mint leaves.
