Mocha Bourbon Balls
|Semi-sweet chocolate square||12 Ounce (12 X 1 Ounce Squares)|
|Butter||1⁄2 Cup (8 tbs)|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Whipping cream||1⁄2 Cup (8 tbs)|
|Bourbon||1⁄4 Cup (4 tbs)|
|Instant coffee granules||1 Tablespoon|
|Ground pecans||2 Cup (32 tbs), divided|
|Chocolate wafer crumbs||3⁄4 Cup (12 tbs)|
Combine chocolate, butter, and sugar in top of a double boiler; bring water to a boil.
Reduce heat to low; cook until chocolate and butter melt.
Remove from heat; stir in cream, bourbon, coffee granules, and 1 cup pecans.
Cover and chill until firm.
Combine remaining cup of pecans and wafer crumbs; stir well.
Shape chocolate mixture into 1-inch balls and roll in crumb mixture.
Store in refrigerator.
